The rd flour (even without a flour blend) seems to deal with lower temps a bit better than caputo. Caputo flour is not malted or enriched in any way, the only exception being americana. Caputo vs restaurant depot brand.

I love both caputo pizzeria and the rd 00 flour! This was cheese, mushrooms, half pepperoni. 27.00 a bag pretty good price.

I'm trying to get to the bottom of what mill restaurant depot sources its len'z best premium high gluten flour from. I saw this the other day and was wondering if anyone has ever tried it or have any pics? I'm interested in shopping at restaurant depot for flour, cheese, canned tomatoes, etc.
